One of the best tips I always give to my guys on the 21 Day Challenge is that you MUST start the day right if you want better results!

By simply switching your first meal of the day to a higher protein breakfast, you will see a huge difference. Unlike a high sugar or high carbohydrate breakfasts (like cereal and toast), the higher protein breakfast will not leave you starving mid morning and feel like nose diving into the breakfast barrel!

Protein is what we call Thermogenic. This basically means your body takes longer to break it down in your digestive system. Because it takes longer, your body burns more calories, you get a low increase in blood sugar, which results in better and more balanced energy levels throughout the morning. This also helps to control appetite and your’e less likely to pick or snack between meal….  WIN WIN!

The best thing about my breakfast muffins?…..  you can cook them the night before to save time!

They are also nice hot OR cold, give them a try and let me know what you think…..

Breakfast Muffins

Ingredients…..

-8 eggs

-1/2lb cooked homemade turkey sausages or chicken/turkey, cut or crumbled into small pieces (see recipe below)

-2 cups of diced vegetables ( 2 fresh tomatoes, 1/4lb broccoli or asparagus, half of small onion or any other preferred vegetables)

-Salt and pepper to season

-Coconut oil or pepper muffin liners

Method: Preheat oven and grease 8 muffin cups with coconut oil or line with paper baking cups. Beat the eggs in a bowl and add meat, vegetables, salt and ground pepper and any other ingredients you wish to add. Pour mixture into the muffin cups and bake for 18-20 mins. Can be eaten hot or cold, great snack or quick breakfast.

Sausages…..

-1lb lean minced turkey

-1 tspn sage

-1/2 tspn salt

-1/2 tspn pepper

-1/2 tspn dried thyme

-Pinch of garlic powder or 1 crushed clove

Method:

In a large bowl, mix all ingredients with clean hand and mould into sausage shapes or patties and place onto a plate, cover and refrigerate for at least one hour. In a large pan heat a drizzle of coconut or olive oil and cook patties or sausages for 4-6 minutes both sides until golden brown.

Enjoy hot or cold!
